I found this recipe recently, and immediately knew I wanted to try it. It just seemed so simple and refreshing instead of heavier dishes that I've been eating lately (especially during cold weather).
The only "bummer" about this dish is that you must have different things cooking in different ways at the same time. For example, my edamame was frozen, so it needed to be steamed in the microwave. The broccoli was roasted, and the kale was suggested to be cooked on the stove, but I decided to make it easier for myself and add it to the roasted broccoli.
But this mixture of green foods is so refreshingly light while still filling you up, thanks to the healthy fats and proteins. Give it a shot if you've been feeling sluggish or need a boost of green in your life!
