I made my own chili from scratch the other day, and I realized I could kick the leftovers up a notch by adding creamy polenta. Now, I have never made polenta before in my life, but I did have cornmeal and the internet to help me along the way. This page from Serious Eats assisted me immensely!
If you have the time, this really is a good way to add a new dimension to your dish. Polenta is a great side dish, or good for roasted vegetables, too.

Oh, and one thing I forgot to add to the recipe card is to add a sprinkle of salt to the polenta once it's absorbed all the water, just to bring out the flavor of the cornmeal even more.
