I've been waiting to try a black bean/avocado taco for a while - and it was so good I had the tacos for dinner two days in a row this week!
This recipe is originally from Martha Stewart. If you want to add a little something, try some minced onion, cheese or a line of ranch dressing. Obviously, once you add cheese or a line of dressing, the tacos are no longer vegan.
