I know this recipe will be a tough sell -- And it was to me, too, when I first heard it. I was introduced to this recipe at least two years ago, and I still had never made it until last month.
The idea of pickles being the foundation for a soup was odd. Even trying to find the best description for this soup doesn't help it sound any more appealing. Think of it as potato soup but with pickle juice and other vegetables added into it - And think if that was a good thing.
This recipe is definitely more for the pickle lovers out there, especially in the wintertime. I urge you to give this soup a shot because it was a LOT better than my mind could grasp from the concept.
