This potato soup was so simple, and great for a winter dinner. I can't remember the last time I had a recipe only need one instruction (two, if you count the recommendation I gave in the recipe card).
Give this soup a shot. Dump everything in a slow cooker, and your job is done. Can you believe that? You can truly "set it and forget it," but since I was around the house when making this, I left out the Velveeta until I had about two hours left of cooking time. I read in a similar recipe that the Velveeta could stick to the slow cooker, but adding it to the end would eliminate that issue.
This recipe was sent to me by Christine L. Pratt, and I adapted it to be just a few servings. This recipe can easily be doubled, depending on the size of your crock pot. Christy's original recipe uses chicken stock and bacon, but I made a vegetarian version.
