Crispy Chocolate Peanut Butter Balls

So, as part of my New Year's resolution this year, I vowed that I couldn't buy any desserts - But instead, I could eat any dessert that I made. To keep with that rule, I wanted to make something that wouldn't totally blow my diet (although I wouldn't argue this dessert is super healthy).

I bring you: Crispy chocolate peanut butter balls. Think "Buckeyes," but with more crunch. I love Buckeyes in their pure form, but these feel like more of a filling snack than a dessert. I use crunchy peanut butter (although creamy works well, too), and Rice Krispies so there's a bit more substance to them than regular Buckeyes.

When I first made these, I was nervous that I'd eat the whole tray. Instead, I did like the dessert but could only eat two before tapping out. So if you're looking for something simple to make, but super delicious and won't make you OD on sweets, give this a shot!
