So, this original recipe was supposed to be "Chili Macaroni and Cheese," which wouldn't qualify for the all-vegan Surprise Saturday. But if you leave out the cheese, you have a chili that is just as good and super hearty. This is a one-pot chili that will feed a crowd, and is just as good (or better) for leftovers in the future.
...And because I love cheese, I made homemade cheddar bay biscuits (aka Red Lobster biscuits) to supplement my meal. But more on that recipe in a future post, I promise!
