I've been trying to eat healthier in the New Year (I know that's the general goal of everyone, but I actually have been following through with it), and this was one of the first recipes I knew I had to try.
Four ingredients, but it's still pancakes, so I was curious. I know not everyone is crazy about the texture of cottage cheese, but when it's mixed in with everything else, I promise you, it doesn't look or taste like cottage cheese in the end.
I will say, my pictures are somewhat deceiving. Other than the last pancake I cooked, the rest were not as easy to flip as regular pancakes, so they didn't look so pretty. But they all tasted great, just the same. They don't taste exactly like your average pancake, but they tasted good to me! I will definitely be making them again.
