This is such an easy recipe and it is SO yummy. I requested it as one of my last meals at my former employer because it is so delicious.
This recipe is a pretty basic blueprint, meaning you can add a little bit more of one ingredient or bring in new ingredients that makes sense in the soup. In this batch, I added some frozen red peppers and black beans that I had in my freezer. Obviously, I don't add in hamburger, as listed in the recipe, but it is a must if you're a meat-eater. :)
Especially on these cold winter nights, this is a winner. I can easily eat two or three bowls of this soup. Add tons of toppings like cheese and sour cream and eat up!
NOTE: I did not include the hamburger in the step-by-step photos below, but I did make my own taco seasoning packet. Instead of using the standard taco seasoning packet from the grocery, I followed this recipe from FoodRenegade.com:
- 1 Tbsp. chili powder
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. crushed red pepper flakes
- 1/4 tsp. dried oregano
- 1/2 tsp. paprika
- 1 1/2 tsp. ground cumin
- 1 tsp. sea salt
- 1 tsp. black pepper
