For an Asian dish that I had never made, this was delicious! I always loved to eat soba noodles, but I had never cooked them before.
In the "Thug Kitchen" cookbook, this is listed as a side dish that could be beefed up a bit with tofu, chicken, etc. but I made it as originally intended. This is great room temperature or cold -- and it keeps in the fridge for a few days after you've made it. So give it a shot!
If you like Asian flavors, or are looking for something on the lighter side, this does not taste heavy. You can make the noodle salad with pasta (like spaghetti) if you can't find soba noodles, but I highly suggest using soba if you can. I was able to find soba noodles at Kroger.
