I saw this guacamole on a menu a few weeks ago, and initially, I thought it was too crazy for a guacamole mix. Pears and pomegranate seeds? On top of guacamole? Whenever I think of guacamole, I think spicy and creamy and of the salt from tortilla chips. I wasn't quite sure how pomegranate seeds and pear would play into that vibe.
Because I was so intrigued, I ordered the guacamole. It was easily the best thing I had with my brunch - And I loved everything I picked to eat. So I knew I had to try to recreate the dip.
Now, I made this a bit harder on myself by buying a whole pomegranate and smacking the seeds out of it. I had never purchased a pomegranate or cut into one before, so it was an adventure... but I don't expect you to do that. I bought guacamole at the store already made, and I did see pomegranate seeds in a container in my grocery store, as well. So make it easy for yourself and only dice the pear. See? This recipe was even easier than you thought.
