This is another recipe that I had in my bookmarked recipes for the LONGEST time, and I had seen them on Pinterest, but just never made. They were straight-forward and delicious to make! Each lasagna roll feeds one person, but if you're super hungry, two rolls should do it. Paired with a salad or maybe garlic bread if you're feeling gluttonous, then you should be all set! :)
Pro-tip: Do not try to cook the lasagna noodles in as small of a pot as I did. That was very problematic, and I was concerned that the water would overflow and the noodles would stick together. It did, and they did.
The original recipe comes from SkinnyTaste.com. She used fat-free ricotta and part-skim mozzarella cheese, but I used whatever I had on hand.

I was told that this recipe freezes really well, so I am trying that. I typically am not a huge fan of freezing my meals then reheating them, but this one was good enough that I think it'll be easily doable.
