You will definitely see a lot of ingredients in this recipe - But I promise, it is worth it! The ingredients don't even seem to make sense - a little Italian, a little American, a little Chinese... but somehow the whole mixture turns Mexican for these amazing chimichangas that will fill you up for hours.
Don't be overwhelmed by the ingredient list - Nearly all of it is normal spices you have in your kitchen cabinet and sauces you have in your fridge.
The work is worth it. If you make it, let me know how it worked for you! This was originally a vegan recipe, but I added cheese and sour cream because no Mexican meal is complete without it, in my opinion. Smaller bites of cooked, diced chicken or ground beef would be great.
Start with the Mexican quinoa mixture - Once it's done, then you can form the chimichangas. All in all, it should take less than an hour to throw together. It can be done on a weeknight!
