This soup could not be easier since it is all done in one big pot! Eat this soup on a cold fall night, or if you don't feel like going out in the rain to grab a meal. It is simple stuff - a lot of it which can come from the freezer - and it'll taste great in less than 30 minutes. If you want to class it up, you can purchase bread bowls from somewhere like Panera Bread and fill the bread bowls with the soup. :D When I ate leftovers of this at work the next day, I bought just a slice of baguette from Panera to dip into the soup.
Tip for meat-eaters: The original recipe includes diced bacon, which you can add to the pot after sautéing the onions. Also, you can use chicken stock in place of vegetable stock (which I used).
