I've got an easy weeknight meal for you - Roast whatever vegetables you have, put them on top of rice, and add some soy sauce. It's a winning combination.
This recipe can be used with any vegetable in your fridge - I typically stick to the same vegetables you'd find in a Chinese restaurant, but cauliflower was what I had in my fridge, so I added it. Red pepper works really well, too.
Not only is this meal easy and filling, but it's simple. Throw some stuff in the oven, cook some rice and you've got a meal.
Try it out when you've got 30 minutes to spare to roast the veggies. And the smaller or thinner you cut the vegetables, the faster they'll cook.
