This week's recipe was one I had been looking forward to for a while. I never cook with coconut milk, so that was exciting to try! Plus the recipe is originally from the Pioneer Woman, aka Ree Drummond. I watch her show "Pioneer Woman" nearly every Saturday morning on Food Network and I absolutely love her! To my surprise, she actually made a vegetarian dish on her show, and it is one I like to eat!
Now, this recipe was one where everything happened so fast, so I didn't take as many photos as I should. But fear not! The recipe is just barely a one pot recipe - You need two, but one is only for cooking rice. Everything else gets thrown into one big pan. It may seem like a lot of ingredients, but everything is getting thrown into the same pot or pan, so it isn't laborious - that's partly why I didn't take more photos!
So cut the onions and such while waiting for the water to boil, throw in rice and then start the actual curry. It'll come together in no time!
Two tips: I would use less honey than the recipe says - My curry tasted too sweet. Also, I would add more hot sauce. I don't usually like spicy food, but this tasted a little tame, even for my taste buds.
P.S. definitely buy naan bread to dip into the curry... but maybe don't eat as much as I did!
