So, I typically don't buy traditional breakfast foods like English muffins, bagels or cereal. But for some reason, I got the urge to buy a pack of English muffins and try some different toppings. I had watched this YouTube video a few months ago and have wanted to put avocado on an English muffin ever since.
Let me tell you, it was the perfect pre-work meal, with enough calories to tide me over until lunchtime (provided I'm also drinking coffee). If I'm taking the English muffin to work, I'll eat it like a sandwich on the way, but since I was eating the English muffin at home, I ate it in two halves.
I was so hungry when I made this that I forgot to add salt and pepper. But adding salt and pepper is the best choice, in case you're one of those people who isn't crazy about the creamy texture of avocado.
