Greek vegetable casserole

My former co-worker (and friend) suggested I do something with roasted vegetables. I asked her if she was pro-Feta cheese, and she is, so I knew exactly what to make. This greek vegetable casserole is a nice twist on roasted vegetables and it is a great side dish or main dish.

Now, I have to say, this was supposed to be done in a 9x13 pan, but for whatever reason I didn't have one handy. I tried to do the same dish in a 9x9 pan, and while it got cooked, there was additional liquid in the pan that there isn't normally (and the original recipe says to bake until the liquid has evaporated).

The only downside to this recipe is that it takes some patience as it bakes. You have some thicker items, like onions and potatoes, that just take a while in the oven. But the wait is worth it!
