Today's Submission Saturday comes from my cousin, who challenged me to make spaghetti squash! I once tried making spaghetti squash in college, and it did not turn out well, so I never tried it again. Until now!
I figured if I incorporated macaroni and cheese into spaghetti squash, it would turn out well. And I think this is a good dish, although it definitely doesn't serve as a substitute for traditional macaroni and cheese! (To see my baked macaroni and cheese recipe, click here.)
The only hang up with this recipe is you have to have the time to let the spaghetti squash roast in the oven. It should take about 45 minutes, but otherwise, it's pretty easy from there. You make a cheese sauce on the stove, just like you would for my baked macaroni and cheese, and then add in some steamed/roasted broccoli. I roasted my broccoli during the spaghetti squash roast process, and it turned out great!
