This week's Submission Saturday is courtesy of my boyfriend. He eats this amazing chickpea salad for lunch about once a week, and since I never get to taste any, then he suggested I make it on my own. The recipe is simple, aside from prep - NO COOKING REQUIRED - and is even better the next day for leftovers.
Apparently this recipe works out to about the same taste and consistency as the one he always eats from a local store... So I must have done something right!
Give it a try, even if you're a meat-eater. It is delicious, and easy to throw together the night before. As the dressing sits, the flavors intensify in the best way. Let me know how it works for you!
