Here is my recipe for a personal favorite comfort food: Baked Macaroni and Cheese! Now I can make regular macaroni and cheese without needing to bake it (and I haven't used boxed macaroni and cheese in YEARS!), but in case I ever want to be extra indulgent - or have the patience - then I bake it. It takes a little bit more time, but oh my goodness, it is so worth it!
There really is no trick to this. The only thing that might be unusual for you (if you stick to boxed mixes or if you mix the cheese and butter all in the same pot with the noodles) is making a separate cheese sauce. You start with equal parts flour and butter, thicken it up, add some milk and spices and then toss in cheese. You'll be so glad you made a separate cheese sauce - Trust me!
And to be honest, this is another recipe that I totally eyeball. I actually made too much cheese sauce in this because I didn't measure anything out. So you really can't make any mistakes with this one! If the sauce seems too thick, thin it out with milk. If it doesn't thicken up, add a little more flour (or wait a few more minutes!).
