This week's Submission Saturday comes from my cousin, Maya. She is a fellow vegetarian, and usually our holiday get-together conversations revolve around new meals to try.
I have to say, i was highly impressed with this. I usually eat sweet potatoes with butter and cinnamon sprinkled on top. So I was originally skeptical since this recipe didn't include any butter or olive oil or anything to drizzle onto the sweet potato. But rest assured, this is delicious. Somehow, the kale and beans are enough to make the dish complete.
Will I be making this again? Yes. Absolutely. It's a little spicy, but that can be altered with the amount of red pepper you add in.
