If you ever want to eat some Chipotle, but happen to have a variety of Mexican food in your pantry, you can easily save yourself some money by creating them yourself! The only bad thing: So many different elements to open up, and a lot of spoons. But... very delicious, healthy Chipotle bowls are your reward!
Obviously, this was made as a vegetarian bowl for me, but grilled chicken (or heck, left over chicken from a dish made earlier in the week) would be great to toss on top, too. I didn't include sour cream or guacamole in my first bowl (so it was a little bland) so I would definitely try to get some of that if possible to add it in. Also, grab tortilla chips to eat with any leftover salsa or as a way to pick up the filling of the bowl. Just a suggestion!
