Looking at the title of this blog post as I type, I realize it isn't very accurate. I said the chicken was optional, when in reality, I REALLY missed the chicken. I actually bought tofu to try the recipe again - without the chicken, it lacked a lot of depth. And you could tell that the chicken would have complimented all of the flavors used in the dish! So next week, I'm planning a "revisited" recipe post with the tofu attempt. But I still thought it would be fair to share the original recipe with my original attempt at this dish.
It is a really quick dish -- even with the chicken needing to be cooked -- for weeknights, and it isn't catered to adult taste buds, so kids should love it, too.
