This recipe was submitted to me by my "second" mother. Thanks to Theresa for sending me this recipe! I love quinoa, and I always have it in my kitchen. So this was a recipe that I definitely wanted to make!
First of all, I did not plan my time effectively when making the meal, so the photos aren't as step-by-step as I usually like to take. I was a hot mess in the kitchen, and I still need to clean up my dishes from it! But the recipe was good, I promise. And it tasted even better at lunch the next day.
This is a simpler side dish (or main dish, if you're me) to make, but the original recipe had all these extra steps that were not worth the effort in my opinion. For example, they said to boil basil leaves for 20 seconds, then dry them out... I don't think that's a necessary step for anyone! It didn't bring out any natural flavor of the basil. Also, I wasn't a huge fan of the massive leaves of basil that I was supposed to add at the end. There's basil in the sauce, and that was enough for me.
So, in my updated recipe, I skipped over a few steps from the original recipe. Feel free to try the original, and maybe you can figure out a better way to make it than I did.
