I love bananas, and I love Snickerdoodles. And this is a perfect combination of both!
This is a (slightly) more complicated recipe than the others I have posted in the past. I usually don't like recipes that need multiple bowls, but I make an exception for these cookies. Another thing I typically hate is waiting to bake the cookies -- You do have to have some patience to let the dough chill for 45 minutes, but it is well worth the wait. I promise!
They're delicious, and they also have a deep dark secret... They're vegan. When people would say "You can make really good stuff that's vegan," I tend to turn my nose up at that, but this is the actual proof.
