Pudding Popsicles

This definitely qualifies for a Maggie Monday recipe - so quick and easy. Three ingredients, and maybe 10 minutes to put it all together (plus the patience to wait for them to freeze).

The recipe originally came from One Good Thing by Jillee. I would make this again, since it was so simple - but I would make it less messy next time! And I would probably invest in wooden sticks instead of disposable spoons. The spoons worked, but I was constantly worried that one-half of the popsicle would fall off because the spoon was off-centered.

Ingredients: 1 small (3.9-oz) box of chocolate pudding (I used Jell-O chocolate fudge), 2 cups of milk (I used skim), and about 1 cup of Cool Whip.

Mix the pudding powder with the milk, and stir for at least two minutes. Fold in the Cool Whip. Set up six disposable plastic cups and spoon the mixture evenly among them. Add a disposable spoon or a wooden stick in the middle of each cup. Cover the top of the cup with foil (optional). Freeze for at least four hours.
