This is an easy salad to take to picnics over the summer, or to make over the weekend and eat every day throughout the week. It gets better with time in the fridge! Also, you can take or leave any ingredient you'd like. If you love broccoli, add more. If you love cranberries, add more. As long as you have a little bit of everything in the bowl, the final product will be delicious.
Ingredients: 1 apple, 1 head of broccoli, 1/4 white onion, 1 carrot (shredded) 1/4 cup chopped walnuts (toasted), 1/4 cup raisins or dried cranberries. For dressing: 1/4 cup mayonnaise, 1/4 cup sour cream, pinch of salt, pinch of pepper, 1 Tablespoon lemon juice, 1 teaspoon sugar.
Slice apple, broccoli, onion and walnuts into bite-sized pieces, and throw into a bowl with the carrot and raisins. Mix mayo, sour cream, salt, pepper, lemon juice and sugar in a separate bowl. Put as much or as little of the dressing into the other bowl with apple, broccoli, onion, walnuts, carrot and raisins. Eat, or put in the fridge to let the flavors mix together - it's better that way! Refrigerate any leftovers.
