I love ginger cookies that are soft and chewy, not the hard ginger snaps that some people love. These are a great spicy fragrant cookie that reminds me of wintertime. Just be sure to tell your friends and family that these are NOT peanut butter cookies - They look similar, but taste completely different.
This is a classic cookie that doesn't need to be chilled, and you get to roll it around in sugar before baking.
My only negative about these cookies is that it makes so many! One batch will make more than 60 cookies. But never fear, they freeze really well and if you de-thaw the cookies overnight, they'll taste just as chewy as they did when you first baked them.

Just a suggestion: If you aren't crazy about a ton of spice, maybe add just 2 or 3 Tablespoons of ginger instead of the full 4 as instructed below.
