This recipe is a bit more complicated than I would typically make on a weeknight, but you NEED to spare an hour or two to make this dish. It'll feed you for days, and it will amaze you each time.
I liked this recipe so much that I made it twice - once with butternut squash, and the second time with pumpkin. Both are delicious, but I'm partial to the butternut squash version.
Like I said, this recipe has multiple steps, so I forgot to take pictures of the béchamel sauce (aka equal parts of melted butter and flour, then stir in milk). So I apologize! But here's a video of how to make béchamel sauce if you need a few pointers.
