One of my friends requested I find a good homemade enchilada sauce for her... Funnily enough, I had been planning on making this baked enchilada pie at some point, which makes a homemade enchilada sauce to go with it! This dish is cheesy, filling and includes tons of vegetables (so you don't feel so bad about the cheese).
This would be a great dish to make for 4-5 people, and other friends could bring side dishes or toppings of guacamole, chips and salsa. This is a dish where you truly won't miss any meat within the pie - there are so many flavors going on, from refried black beans to cheese to enchilada sauce to vegetables, that you won't need any beef or shredded chicken, but you could certainly add some if you have it laying around.
But leftovers of this pie are amazing!
This recipe originally came from Ambitious Kitchen. I stuck to the recipe mostly, except I used whatever vegetables I had on hand instead of sticking to what she suggested.
