Happy Halloween! I got an amazing opportunity to drive down to Louisville, Kentucky, to experience their annual Jack-o-lantern Spectacular. More than 5,000 pumpkins are on display - each with a different face - on a walking path in one of the city's parks. I took dozens of pictures, many that you will see later in this blog post, and had a great time.

I thought it would be pretty neat to pair the pumpkin extravaganza with one of my favorite desserts that I always love to eat, but had never made from scratch before.
Without further ado, this special Saturday recipe: Pumpkin roll!
I truly tested my tiny kitchen with this recipe - It was not easy to find enough table space to roll up the cake without making a big mess. Powdered sugar was everywhere, and now I know why my mom always said it was too much work to make. But if I had a bigger kitchen, it wouldn't have been too terrible. Now, the ingredient list is pretty long, but bare with me. It doesn't seem complicated when you make it!

Thanks again to the crew of Jack-o-lantern Spectacular in Louisville for letting me stop in! It was a very cool experience, and a really large event. I got to the park 30 minutes before the gates opened and there were at least 200 people waiting before I got in line. Tons of families and tons of photographers were at Iroquois Park. It was a really lovely event.
