Here is one of my absolute favorite side dishes! I know some people may think "Brussels sprouts? Really?" but they are so yummy. I don't know how they got a bad reputation for all these years, but they're simple greens that, when roasted, are the perfect thing to pair with a meal.
This is my standard roasting method for almost anything: carrots, zucchini, broccoli, cauliflower, you name it. All you need for almost any vegetable is olive oil, salt and pepper (and maybe some garlic or thyme, if you want to mix it up).
In the last photo below, you'll see it's paired with stuffed pasta shells (and the recipe's to come for that... :D). This side dish can be paired with anything - a chicken breast, pork chop or sweet potato. Any combination is a good one, as far as I'm concerned!
