These burritos are absolutely amazing.
If you've ever been to Austin, Texas, they have perfected the breakfast burrito and there are a ton of places to try them when you're in town. But when I'm not in Austin, I have to fend for myself. So my boyfriend and I devised this recipe that brings me back to Austin and fills me up for breakfast.
Enter the breakfast burrito. Scrambled eggs + crispy potatoes + cheese + salsa, all in a tortilla.
Give it a try sometime. The recipe is simple, but the only negative is that it uses three separate skillets or pans. If you want to try to consolidate it down, you could make the potatoes the night before and only need to make the scrambled eggs in the morning. That'll cut down on scrambling for a pan and one more thing to cook in the A.M.
